Fresh red tuna loin
White Sesame
Black Sesame (optional)
Forvm Cabernet Sauvignon Vinegar
Accompaniment
Japanese soy sauce
Gari (marinated ginger)
Wasabi
Some Endive salad with vinaigrette

ELABORATION

  1. We will start by cutting the tuna into regular slices of about two fingers thick. We mix the black & white Sesame.
  2. Put the tuna pieces into the mixture of sesame seeds and make sure that they are equally covered.
  3. Heat a pan, and once this has taken a good temperature, put the tuna pieces in there and fry on high heat for a very short time on each side (its important to not cook to much in order to avoid them to be totally cooked).
  4. The key is that it is well done and crispy on the outside, but almost raw on the inside.
  5. To present the dish, add some drops of Forvm Cabernet Sauvignon vinegar reduction with Japanese soy sauce, candied ginger, wasabi, or a salad.
