Ingredients for the Flavivs vinegar cream
130 gr Sugar
90 gr Flavivs Vinegar
80 g Butter
2 Eggs
2 egg yolks

Ingredients for 40 macarons
60 gr Almond
140 gr cluster sugar
2 egg whites (or 60 g)
1 teaspoonful of sugar
Salt
Rose essence
Red colour for food

ELABORATION

  1. For the Flavivs vinegar cream, mix sugar, vinegar, butter, and eggs and Flavivs. Heat the result in a saucepan stirring until the texture of a cream. If you have a Thermomix, cook it for 12 minutes at 90 ° C at speed 4.
  2. To elaborate macarons, mix the almonds and the cluster sugar.
  3. Mount the egg whites with the salt, a spoonful of sugar, color and essence of roses, and add the almonds and cluster sugar mixture gently.
  4. Put the result in a hose with horn bowls and 1 centimeter circumference 2cm silicone on and take a little time so they take shape.
  5. Let stand for 30 minutes.
  6. Cook macaroons 150ºC for about 15 minutes on a plate in the oven.
  7. Put the Flavius cream in a pastry bag and fill the macarons.
